October 11, 2012—As schools prepare to showcase their achievements and improvements in the lunchroom during National School Lunch Week (October 15-19), the National Foundation for Celiac Awareness (NFCA) is bringing attention to gluten-free needs and how schools can meet them. Available online from NFCA are resources that may be useful to school nutrition operations, including a tip sheet titled “8 Great Ways to Recognize Gluten-Free Needs During National School Lunch Week.”
To help school nutrition professionals meet gluten-free needs throughout the school year, NFCA also offers an online gluten-free training program for school nutrition professionals and a month-long meal plan that schools can adopt for serving gluten-free students.
